Fitness Friday:: Colorful Potato Salad With Hot Dogs

            Hello Darlings!! Friday is here. I have a great weekend to look forward to because I am redecorating my living room/family room. I just hope it comes out exactly the way I  picture it in my head. Today I am sharing with you something else you can do with hot dogs besides putting them in your bun. My weakness for hot dogs started when I tried it in my favorite potato salad. They add so much flavor to the salad. It only take a few minutes to get this dish ready. The best part about it is that you can keep it in your fridge for a couple of day. I have a pictorial below that will give you an idea how I prepare this delicious dish.

            I told you it was colorful! I cooked for four people. So I made sure that I had enough potatoes for 4 people. You can see that the potatoes got reduced to 4 instead of 5. It is because my daughter ate one when I was peeling them. It happens, right? I cut both the carrots and the potatoes into small pieces after cooking them in slightly salted water. The hot dogs are already salty, you don’t want to add too much salt. I chopped the onions, sweet pepper, and hot dogs using a knife. The only thing that was left for me to do after that was mixing all the ingredients together and add the mayo. I started out with 6 tablespoons of mayo, then I had to add 3 more. It may sound like a lot, but it is not. I added some black pepper to taste, and voila! We ate it with pork chops and homemade gravy. It is very delicious. You can substitute the hot dogs for lean ham or some bacon bits. I only used four hot dogs, by the way. It is safe to say that my daughter ate the other one after I boiled them.
